Spanish cuisine flavorful simple and most famous dessert

Serves 08

Ingredients:

8 Egg yolks



220g Caster sugar (01 cup)


1.125 liters milk (4 ½ cups)


3 teaspoons grated lemon and orange rind



01 cinnamon stick


75g wheaten corn flour (½ cup)


75g caster sugar extra cup)


01 teaspoon vanilla extract


01 Star anise


Method:

Beat egg yolks and sugar in a large bowl with whisk until creamy.




Combine 01 liter of the milk, rind, vanilla, Star anise and cinnamon in large saucepan. Stir over medium heat until mixture just come to the boil, then remove from heat.




Strain milk into a large jug, pour milk into egg mixture, whisking constantly.



Stir remaining milk and corn flour in a small jug until smooth, add to egg mixture
Return mixture to pan stir constantly over heat until mixture boils and thickens.




Pour mixture into a heatproof flan dish, cover, refrigerate 06 hours.





Just before into serving, sprinkle with extra sugar, cook under preheated grill until sugar is caramelized.
