Chicken Sandwiches






Ingredients:


Slices white sandwich Bread


Chicken breast 625 g


½ cup mayonnaise


¼ Cup chopped fresh flat-leaf parsley


Salt and pepper to test


Butter 45 g


Method:


Chicken breast fillets in medium saucepan, add enough cold water to cover.
Bring to the boil, reduce heat, simmer, and covered.10 minutes.
Remove from heat. Stand 30 minutes, drain.







Cut chicken into 2 cm (¾ inch) pieces, combine in medium bowl with ½ cup mayonnaise and ¼ cup coarsely chopped fresh flat-leaf parsley and Salt and paper to test.







Spread eight slices white sandwich bread with 45 g softened butter.





Sandwich chicken mixture between bread slices.


Cut each sandwich into quarters.
