Coconut Syrup Cake


Geek coconut cake (Ravani cake)




Ingredients:


125g butter, softened


220g caster sugar


4 eggs 


160g Desiccated coconut or fresh grated coconut


150g flour


2 tablespoon Desiccated coconut or fresh grated coconut extra


Ingredients for lemon syrup


220g caster sugar


250ml milk or water



2 inch strips lemon ring

01 cinnamon stick


Method:

Preheat oven to 160 °C/325 °F
Grease cake pan (deep 20cm (8-inch)) line base and side with baking paper.
Beat   butter and sugar in bowl, mixture until light and fluffy.
Beat in eggs one at time. Transfer mixture to large bowl, stir in coconut and sifted flour.




Spread mixture into pan, sprinkle with extra coconut
Bake cake about 50 minutes.


Meanwhile, make lemon syrup.

Method:

Stir Ingredients in small saucepan over heat until sugar dissolves, bring to the boil. Reduce heat, uncovered, without stirring, 5 minutes strain



After 50 minutes take out the cake pour hot lemon syrup over hot cake in the pan and leave cool


 Sprinkle with extra coconut and serve
