Method:
Preheat
oven to 160 °C/325 °F
Grease
cake pan (deep 20cm (8-inch)) line base and side with baking paper.
Beat butter and sugar in bowl, mixture until
light and fluffy.
Spread
mixture into pan, sprinkle with extra coconut
Meanwhile,
make lemon syrup.
Method:
Stir
Ingredients in small saucepan over heat until sugar dissolves, bring to the
boil. Reduce heat, uncovered, without stirring, 5 minutes strain
Sprinkle with extra coconut and serve
