Spiced Potato Cakes
Potato
cakes with peas and sweetcorn a simple dis that a tasty accompaniment.
Ingredients:
Serves 04
Potatoes
600 g
Flour 25 g
Peas
cooked 100 g
Sweetcorn
150 g
Curry
powder 2 tsp.
Garlic
peeled and crushed 01 or 02 clove
Fresh
coriander chopped 04 -05 tbsp.
Egg 01 or
02
Oil
Lemon
wedges to serve
Method:
Peel the
potatoes and cut into quarters. Place in a large saucepan of cold water and bring
to the boil.
Reduce
the heat to a simmer and cook for approximately 12 -15 minutes, or until the
potatoes are tender when tested with the tip of a knife.
Remove
from the heat and drain thoroughly.
Using damp
hands, divide the mixture into equal-sized pieces.
Serve
with lemon wedges
