                                     Spiced Potato Cakes


Potato cakes with peas and sweetcorn a simple dis that a tasty accompaniment.

Ingredients:

Serves 04

Potatoes 600 g

Flour 25 g

Peas cooked 100 g

Sweetcorn 150 g

Curry powder 2 tsp.

Garlic peeled and crushed 01 or 02 clove


Fresh coriander chopped 04 -05 tbsp.


Egg 01 or 02

Oil

Lemon wedges to serve

Method:

Peel the potatoes and cut into quarters. Place in a large saucepan of cold water and bring to the boil.



Reduce the heat to a simmer and cook for approximately 12 -15 minutes, or until the potatoes are tender when tested with the tip of a knife.


Remove from the heat and drain thoroughly.

Mash the potatoes until smooth and no lumps remain.






Add the flour, peas, sweetcorn, curry 
powder, garlic, coriander and egg mix well.


Using damp hands, divide the mixture into equal-sized pieces.
Each piece into a ball and then flatten slightly.

Heat a non-stick frying pan over a moderate heat and add little oil.



Cook each Patti for about 6-10 minutes or until golden and piping hot, turning halfway through.

Serve with lemon wedges
